1.DESCRIPTION

Papain also known as papain enzyme is the use of immature papaya (Carica papaya) fruit milk, the use of modern bioengineering technology extracted from the pure natural biological enzyme products, it is composed of 212 amino acids.
Because of its high enzyme activity, good thermal stability, natural safety and other characteristics, it has been widely used in food, medicine, feed, daily chemical, leather and textile industries.

2.WORKING MECHANISM
The active center contains cysteine, which belongs to the enzyme containing sulfhydryl (-SH) peptide chain, has the activity of protease and esterase, has a wide range of specificity, and has a strong enzymatic hydrolysis ability for animal and plant proteins, peptides, esters, amides, etc., and also has the ability to synthesize protein hydrolysates into proteinoid substances. This ability can be used to improve the nutritional value or functional properties of animal and plant proteins.

3.PROPERTIES
● Temperature range: effective temperature range 10-85℃, optimal temperature range 55-60℃.

●pH range: Effective pH range 3.0-9.5, optimal pH range 6.0-7.0.
