
1.DESCRIPTION
Invertase, also known as fructofuran hydrolase, derived from saccharomyces cerevisiae strains, is a food enzyme preparation refined from liquid deep fermentation.Invertase(fructofuranoside fructohydrolase) specifically catalyzes the hydrolysis of β-D-fructofuranoside linkages in non-reducing sugars with relatively specific properties. It not only catalyzes the hydrolysis of sucrose to glucose and fructose, but also catalyzes the hydrolysis of raffinose to produce mithiose and fructose. Invertase has high catalytic activity and wide substrate specificity. By adding an appropriate amount of invertase, you can accelerate the production of glucose and fructose, improve the taste and sweetness of the product, and reduce the adverse effects of sucrose on human health.
